Trong qu\u00e1 tr\u00ecnh s\u1ea5y th\u0103ng hoa, nh\u1eefng bi\u1ebfn \u0111\u1ed5i ch\u00ednh c\u1ee7a s\u1ea3n ph\u1ea9m ch\u1ee7 y\u1ebfu l\u00e0 do qu\u00e1 tr\u00ecnh l\u1ea1nh \u0111\u00f4ng: Khi l\u1ea1nh \u0111\u00f4ng n\u01b0\u1edbc trong d\u1ecbch b\u00e0o c\u1ee7a s\u1ea3n ph\u1ea9m b\u1ecb \u0111\u00f3ng b\u0103ng l\u00e0m bi\u1ebfn t\u00ednh protide, ho\u1ea1t \u0111\u1ed9ng enzyme gi\u1ea3m nh\u01b0ng kh\u00f4ng b\u1ecb \u0111\u00ecnh ch\u1ec9 (Krokida v\u00e0 ctv, 2000; Khalloufi v\u00e0 Ratti, 2003).
